Chai Lords Turmeric Vegan Curry

Ingredients:
  • 2 tablespoon coconut oil
  • 1 small onion diced
  • Chopped garlic and ginger
  • 1 tablespoon Chai Lords Turmeric Latte 
  • 1 tablespoon curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1/2 teaspoon Coriander ground
  • 1/2 teaspoon cumin
  • 1 can of lentils, rinsed. 
  • 1 cup vegetable broth
  • 1 can of crushed tomato's
  • 2 cans of coconut milk
  • 400g pumpkin, cubed 1cm x 1cm
  • Mushrooms or green beans
  • Steamed rice to serve. 

Method:

  1. Fry the onion, garlic and ginger in the coconut oil. 
  2. As the onion softens, add the Spices and latte powder and stir through until fragrant. 
  3. Add the stock, tomato and 1 can of coconut milk, as well as the pumpkin pieces. 
  4. Simmer for 10 minutes before adding the rest of the veggies, coconut milk and the washed lentils. 
  5. Simmer for a further 5 minutes or until veggies are cooked. Season and serve with fresh Coriander and basmati rice.
