Chai Lords Apple Tarte Tatin

Method

  1. Preheat oven to 190C
  2. In an oven safe pan, begin melting the sugar over a low to medium heat. 
  3. Peel and core the apples and cut into quarters. 
  4. Lay two Puff pastry sheets on top of each other and gently press together with a rolling pin. 
  5. Bring the sugar to a golden brown Caramel (swirl thr pan, do not mix with any utensils)
  6. When the Caramel reaches the desired colour, add the butter and swirl around the pan. 
  7. Arrange the apples around the pan and give the pan a gently shake to allow the Caramel to reach up the sides of the apples. 
  8. Keep cooking on low heat for a further 5 minutes to allow the apples to begin to soften
  9. Place a plate, similar size to your pan over the pastry and cut into a circle. 
  10. Dust the apples with the chai lords powder and then place the pastry over the apples, tucking in at the edges. 
  11. Pierce some holes through the pastry for steam to escape. 
  12. Bake for approx 30 minutes or until pastry is dark golden brown and cooked through. 
  13. Remove from the oven and allow to rest for 2 minutes before carefully placing a plate on top of your pan and flipping the tart over, careful of the hit Caramel! 
  14. Enjoy with vanilla ice cream or creme fraiche.
